Be More Adventurous With Your BBQ This Summer
When you think of a barbecue two main things spring to mind; plain burgers and sausages. Tasty as they are, they’re not the most exciting of dishes, especially when you consider the many other possible recipes you can cook on the grill.
Impress the other members of your family and your friends with some of these fantastic alternative barbecue treats:
Lamb Koftas
Preparation time: 15 minutes
Cooking time: 15 minutes
Ingredients
500g lamb mince
Oil
2 crushed garlic cloves
2 tsp. ground coriander
1 tsp. ground cumin
1 tsp. crushed mint
Recipe
– Blend all the ingredients and roll the contents into 8 individual balls.
– Get four skewers and place two of the balls onto them. Cook for 3-4 minutes on each side and season as appropriate. Serve with a suitable dip and pitta breads.
Cajun Chicken
Preparation time: 10 minutes
Cooking time: 12 minutes
Ingredients
4 chicken breast fillets (boneless and skinless)
¼ tsp. paprika
2 tsp. thyme
1 tsp. dried onion flakes
1 tbsp. sunflower oil
¼ tsp. cayenne pepper
Recipe
– Make slashes on one side of the chicken
– Mix together all the spices and put the contents onto a plate
– Apply the oil and spice mix onto the chicken with a brush.
– Cook on both sides for 6 minutes.
Thai Fishcakes
Preparation time: 20 minutes
Cooking time: 25 minutes
Ingredients
300g boned and skinned fish
5 chopped spring onions
200g prawns
2 tsp. fish sauce
2 tbsp. Thai curry paste
1 tbsp. soy sauce
1 tsp. fresh ginger
Chopped coriander
Lime juice
Recipe
– Get a food processor and blend the fish, ginger sauce, fish sauce, soy sauce, Thai curry paste and coriander together.
– Shape the contents into 20 fishcakes.
– Apply some oil to the cakes before putting on the grill and cooking on both sides until browned.
– Use some chilli sauce as a dip and squeeze the limes over the top to add to the flavour.
